Founded in 2016, Domaine Camille Thiriet is a symbol of artisanal winemaking excellence.
Situated across from Château de Comblanchien in Côte-de-Nuits, the domain is a collaborative vision of Matt Chittick and Camille Thiriet.
Their paths intertwined at Domaine de Bellene, where they honed skills and built a network of Côte d'Or vignerons.
This background is the cornerstone of their commitment to sourcing only the finest fruits.
The recent acquisition of 6.5 hectares, including three prime Côte de Nuits-Villages climats and some generic Bourgogne in organic conversion, adds a captivating chapter.
Anticipating debut wines in the promising 2022 vintage, currently producing around 13,000 bottles annually, Camille Thiriet remains a testament to crafting Burgundy wines with unparalleled care and dedication.
The Estate’s philosophy
In the domain's vineyards, most vines are aged over 25 years for whites and over 50 years for reds.
This commitment to quality extends to the cellar, where a slow and gentle wooden small press is employed to underscore their dedication to preserving the essence of the grapes.
For the white wine production of Chardonnay and Aligoté (excluding Savagnin), both alcoholic and malolactic fermentation takes place in oak barrels, with 20% being new.
In the case of red wines, crafted with 30% to 100% whole bunch, a several-month-long oak ageing process (approximately 20% in new oak) ensures the maintenance of fruit purity.
The meticulous winemaking embraces artisanal techniques like bucket remontage, foot stomping, natural yeast fermentation, minimal sulfur additions, hand-labeling, basket pressing, and the use of carefully selected barrels.
These practices result in wines with undeniable charm and character.
